Bicarbonate of Soda is also known as baking soda, is mainly used in cooking and baking. Borwick’s Bicarbonate of Soda works in a similar way to baking powder, in that it acts as a rising agent, but requires activation by combining with other ingredients. Often vinegar or lemon juice is used to help the process.

Ingredients such as buttermilk or vinegar can be used to start the activation process which releases carbon dioxide into the dough – forming bubbles that help it rise, giving cakes etc that 'light as a feather' appearance.

Ingredients: Sodium Bicarbonate (Bicarbonate of Soda).

Some Uses:

- To make Irish Soda Bread: Mix a teaspoonful of bicarbonate of soda into half a kilo of wholemeal flour. Add 2 cupfuls of buttermilk and mix into a sticky dough. Form into balls and dust with flour. Bake for half an hour in a preheated oven at 200°C.

- To make stout bread: As above, but replace some or all of the buttermilk with stout and a teaspoonful of sugar.
