Bean 
Salad
Ingredients for 
salad:                                            
Ingredients for dressing:
225g boiled 
red kidney 
beans                
                     
           4 
tbsp orange juice
225g boiled 
chick 
peas                                               
           
2 tbsp lemon juice
150g 
sprouted moong 
beans                                       
           
1 tbsp olive oil
6 spring 
onions                                                
       
                pinch of garlic 
powder
1 cucumber 
(cut them into small cubes)                        
           
Mixed herbs
2 green 
peppers (cut them into small cubes)                 
          
 Salt to 
taste
Method:
Mix the 
boiled kidney beans, chick peas, sprouted moong beans, cucumber, green pepper, 
spring onions together in a bowl.
In another 
container, mix all the dressing ingredients and leave to stand for 30 minutes to 
allow the flavors’ to blend together.
Pour the 
dressing over the bean salad and mix. Serve cold
Sprouting Moong 
beans
Soak moong 
beans for 24hrs in a plastic bowl or ceramic bowl. Make sure the bowl is in a 
warm place and away from the sunlight. 
Drain the 
water and tie the moong beans in a cotton or muslin cloth.
Put the 
moong beans into the bowl and leave it for another 24hrs. 
If the 
moong beans have not sprouted fully then sprinkle water over them and again 
leave them for 24hrs.
